My mom’s favorite! I was making her a batch and decided to convert and create my own vegan recipe.

This is very yummy!

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 stalks celery, chopped
  • 2 carrots, diced
  • 2 tbsp extra-virgin olive oil
  • 2 tsp curry powder
  • 6 cups vegetable stock
  • 1 apple, peeled, cored and diced
  • 1 1/2 cups cooked brown rice
  • salt and pepper to taste
  • 1/4 tsp cayenne pepper
  • 1/4 tsp dried thyme
  • 1 can lite coconut milk
  • 1 tbsp lemon juice

Saute onions, garlic, celery and carrots in a large soup pot over medium heat for about 5 minutes.

Add curry powder and cook for 5 minutes more.

Add stock, mix well and bring to a boil. Simmer about 30 minutes.

Add remaining ingredients, heat through and serve!

* For the non-vegan protein lovers add a cubed cooked chicken breast.
